Chili Recipes I'm loving for FALL! October Meal Prep

I live in Florida so when I say the word "Fall" it's basically wishful thinking. 

However, I cannot help myself when it comes to ENVYING all those cozy fall recipes I see floating around out there this time of year!

So this week, I said screw it and made some AMAZING chili recipes that turned out SO DANG GOOD. I also made turkey meatloaf  and some BOMB shredded chicken with cauliflower nachos.

No Bean Chili is an exclusive, you guys! Not even out for the public yet so don't go telling everyone my secrets!

1 Tbsp. ghee (organic grass-fed, if possible)

1 lb. raw 96% lean ground beef

¾ cup chopped onion (approx. 1 medium)

3 cloves garlic, finely chopped

2 cups low-sodium organic chicken broth

2 cups all-natural tomato puree

1 Tbsp. chili powder

1 tsp. ground smoked paprika

¾ tsp. sea salt (or Himalayan salt)

½ tsp. ground black pepper

½ tsp. garlic powder

1. Heat ghee in a large soup pot over medium-high heat.

2. Add beef; cook, breaking apart with a spoon, for 4 to 6 minutes, or until lightly browned.

3. Add onion and garlic; cook, stirring frequently, for 2 to 3 minutes, or until onion is translucent.

4. Add broth, tomato puree, chili powder, smoked paprika, salt, pepper, and garlic powder; stir to combine. Bring to a boil; reduce heat to low. Gently boil, stirring occasionally, for 10 minutes, or until chili is slightly reduced and thickened.

These Cauliflower Nachos were so yummy! We had them as a veggie on National Taco Day along side of real tacos and real nachos with some super easy to make shredded chicken!

White Chicken Chili

This is a delicious, hearty chili that would make for a great post workout dish! It's balanced with healthy carbs, lean protein, healthy fats and veggies! 

There you have it!! These will serve as our MAIN DISHES for both lunch and dinner! Easy to mix, match, modify and add to in terms of serving with bread, rice, pasta, salad, veggies, etc.
